The owner is an LSU graduate and moved to Dallas after graduation. I missed the food from Louisiana and started cooking Cajun food at home and threw our yearly crawfish boils. I started watching the Great Food Truck Race on TV and I thought that Dallas really needed a Cajun Food Truck. After that moment, I had our truck rolling the streets within 4 months. I named the company CajunTailgators for my love of LSU tailgates! We opened the doors 2-15-12!
