The owners are two LSU grads that met in college and moved to Dallas after graduation. We missed the food from Louisiana and started cooking Cajun food at home and threw our yearly crawfish boils. We started watching the Great Food Truck Race on TV and mentioned that Dallas really needed a Cajun Food Truck. After that moment, we had our truck rolling the streets within 4 months. We named the company CajunTailgators for our love of LSU tailgates! We opened the doors 2-15-12!
